Apple and Bleu Cheese Coleslaw

Serves 4 to 6

Here is a recipethat combines  apples and blue cheese with the cabbage to produce a deliciously different version on the traditional coleslaw theme.

The Dressing:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise, or favorite commercial brand
  • 2 tablespoons sweet and hot brown mustard
  • 1/4 cup apple cider
  • 2 tablespoons cider vinegar
  • 1 clove garlic, very finely minced
  • 2 tablespoons chiffinade of fresh mint leaves
  • 1 tablespoon brown sugar

Blend all ingredients together well and set aside until needed.

The Slaw:

  • 2 or 3 crisp red apples, quartered, cored and thinly sliced – (skins on)
  • The juice of 1 or 2 lemons
  • 1 teaspoon sugar
  • About 2 cups of finely shredded green cabbage
  • About 1/2 cup finely grated red cabbage
  • 2 green onions, sliced thin including most of the green
  • 1/2 a sweet purple onion, cut into thin rings
  • Salt and fresh, coarse ground black pepper to taste

About 1/2 cup crumbled blue cheeseToss the apples with the lemon juice and sugar and set aside.  Prepare the cabbages and onions and toss together in a salad bowl with the apples.  Drizzle the dressing over and toss gently.  Add salt and pepper to taste and carefully toss again.  Scatter the blue cheese over the top and chill.  Just before serving, lightly toss to distribute the blue cheese.
